  1. 8 oz caster sugar.
  2. 8 oz self raising flour.
  3. 8 oz soft margerine.
  4. 4 eggs.
  5. Splash vanilla essence.
  6. 4 oz butter.
  7. 10 oz icing sugar.
  8. Strawberry/raspberry jam.

Step by step how to cook Victoria Sponge:

  1. Mix flour, eggs, sugar and butter with a whisk until well mixed..
  2. Add a splash of vanilla.
  3. Heat oven to 180 and cook for 25 minutes or until the top springs back/knife is clean.
  4. Once cooled, mixed icing sugar and butter into a mix. Should be able to smooth about.
  5. Spread butter cream on one half of the sponge and jam on the other, place together. Sprinkle with icing sugar if you wish..
