Ingredients for Lemon Rice:
- 1 . Cooked rice - 1 cup.
- 2 . Lemon - 1.
- 3 . Groundnuts - 10 numbers.
- 4 . Cashews - 5 numbers.
- 5 . Mustard - 1/2 tsp.
- 6 . Channa dal - 1/2 tsp.
- 7 . Hing - big pinch.
- 8 . Turmeric - 1/4 tsp.
- 9 . Salt - as needed.
- 10 . Oil - as needed.
- 11 . Curry leaves - 5 numbers.
- 12 . Coriander leaves - for garnish.
Step by step how to cook Lemon Rice:
- 1. Soak the rice for 15 min and cook with little salt. Spread this in plate let it cool completely. Keep this aside. 2. Heat small kadai in mild flame add mustard, channa dal, groundnut. Saute until groundnut done. Now add the curry leaves and cashews saute until it change to golden colour..
- 3. Add hing, turmeric powder, hing to this. Now squeeze the lemon juice to this. Let it get the thick consistency. Now garnish with coriander leaves. 4. Add this thick lemon gravy to rice, add enough salt and mix nicely. 5. Yummy lemon rice ready to serve..
