- 1 kg pork ribs/belly.
- 1 cup liver paste.
- 1/2 peanut butter.
- Half a stick butter.
- 1 medium onion chopped.
- 2 cloves garlic minced.
- 1 tablespoon soy sauce.
- 2 tsp worcestershire sauce.
- 1 tsp ground black pepper.
- 1 tsp dried chilli.
- Pineapple tidbits.
- 1 medium carrot.
- 1 cup dried green peas.
- 1 tsp salt.
- 1/2 cup pork broth.
Step by step how to cook Filipino Food Series: Mom’s Sweet & Spicy Pork Caldereta (Pork Stewed in Liver Paste):
- Boil the pork first for about 30 minutes medium Low fire. Set aside 1/2 cup of broth then drain excess water..
- In a separate pan, Sauté onions, garlic in butter then add the pork soy sauce, Worcestershire sauce, black pepper and salt..
- Add the water, liver paste and peanut butter then let it simmer for 3-5 minutes..
- Add the pineapple tidbits, green peas and carrots and simmer again for 3-5 minutes until carrot is cooked..
- Add the dried chilli and serve with hot rice!.
